Mango & Coconut Milk Ice Cream with Amanda

I have a confession... I am not the best chef. I can whip up the basics (spaghetti, tacos, milkshakes) but that is about it. You will never find me posting gourmet recipes that I threw together in my spare time. I love reading blogs though that have healthy but tasty recipes for the cooking illiterate like myself. One of my all time favorite blogs like this is Amanda K. by the Bay. She is so sweet & offered to share a recipe with us today on Scuttle!! Thank you Amanda!

"Hey Scuttle readers, my name is Amanda and I blog over at Amanda K. by the Bay. I love to bake and cook, so to celebrate summer I will be posting a new ice cream recipe every week! This ice cream marathon was kicked off with mango and coconut milk ice cream; it's a super tasty frozen treat and can be made with no added sugar, so it's healthy...right? Right! Mango & Coconut Milk Ice Cream

2 fresh, ripe mangos, peeled and cubed

1 can regular coconut milk

1/4 cup half and half

lime juice from 1/4 of a lime

sweetener (sugar, agave syrup, etc.), optional

1. In a blender, blend mangos, coconut milk, half and half and lime juice until very smooth. Taste mixture and add sweetener if needed. I didn't add any and it was great! Place in fridge for at least 2 hours or overnight.

2. Add cold mixture into ice cream machine for about 20 minutes or until you have the texture of soft serve. If you prefer a harder ice cream, place into an airtight container and let harden overnight.
